Cilantro Lime Rice — (Garden Fresh + Whole Foods)
Cilantro Lime Rice is a bright and refreshing dish made entirely from whole foods you can grow at home. Fresh cilantro, fragrant lime, and garlic chives come together to elevate simple jasmine rice, and if you love a full garden-to-table experience, you can even grow your own rice in containers. It’s an easy, nourishing way to turn homegrown ingredients into a delicious meal that pairs with vegetables, beans, and add a grilled protein.
Ingredients
1 cup jasmine rice
1 ½ cups water
1 cup fresh cilantro, finely chopped
2–3 tbsp fresh lime juice (about 1 large lime or 2 small limes)
1–2 tbsp fresh lemon juice (natural salt substitute)
1 tbsp finely chopped garlic chives
1 fresh garlic clove, minced
1–2 tbsp olive oil
Optional: 1 tsp lime zest (extra brightness)
Instructions
Rinse the rice
Rinse jasmine rice under cool water until the water runs mostly clear. This keeps the grains fluffy.Cook the rice
Add the rice and water to a small pot. Cover, bring to a gentle boil, then reduce heat to low and cook for 12–15 minutes until tender. Turn off heat and let it rest covered for 5 more minutes.Prep the flavor mix
While the rice is resting, combine:chopped cilantro
lime juice
lemon juice
garlic chives
minced garlic
olive oil
Fluff and combine
Fluff the rice with a fork. Pour the cilantro–citrus mixture over the top and gently fold it in until everything is evenly combined.Taste + brighten
If you want more flavor without salt, add:more lemon juice (boosts the “salty” effect)

a pinch of finely minced lemon zest
Serve warm
